feat(mainnet): add Crystal Exchange

Adds Crystal Exchange to the mainnet protocol list.

Crystal is a fully on-chain central limit order book (CLOB) DEX on Monad, offering self-custodial spot trading with a backstop AMM, liquidity vaults, and a token launchpad.

Notes

• Router address provided by the Crystal team; everything else sourced from crystal.exchange and docs.crystal.exchange.
• The router is a verified contract on Monad mainnet (BlockVision verifyStatus: perfect); its verified source names the contract Crystal, matching the docs' description of it as "the router and registry for all markets."
• The docs also reference a CrystalVaultFactory on mainnet, but its address is still listed as TBD, so it is omitted here.
• python scripts/validate_protocol.py --network mainnet passes locally.
