Overview
Upgrades every GitHub Actions workflow that checks out the repo from actions/checkout@v6 to actions/checkout@v7, including build/lint, kit builds, native and integration tests, cross-platform tests, size reports, and release draft/publish/maintenance flows.

In release-publish.yml, the CocoaPods publish jobs also move from the pinned v6.0.2 commit to v7.0.1 (3d3c42e5aac5ba805825da76410c181273ba90b1). No checkout with: options or job logic change—only the action version.

v7 tightens defaults around unsafe PR checkouts (e.g. pull_request_target / workflow_run); this repo’s checkouts mostly use standard PR pushes, sparse checkout, or bot tokens as before.
