DOC: Config arg no longer reuired

Resolves #1872

Updates documentation to reflect automatic configuration discovery:

• config is now documented as deprecated.
• Discovery checks the nearest .fmu/, then the standard global config.
• Examples no longer load or pass global configuration explicitly.
• Updated the examples to use the latest schema.
