docs: add io.cozy.ai.chat.assistants doctype - #289

Includes the doctype addition originally opened in cozy#286 by @lethemanh, which has been open for months without being merged, plus: - documentation of the assistant prompt -> system message injection behavior (a conversation created with an assistantID gets the assistant's non-empty prompt prepended as a role: system message) - the previously-undocumented knowledgeBase field, and the relationships.provider.data.metadata.providerId field, both actively read by cozy-stack (model/rag/chat.go)
