fix: broken star history chart in README - #1086

The star history chart in the README is currently broken due to GitHub stargazer API restrictions. Update it to use a working endpoint so the chart displays again.

The star history chart in the README no longer renders because its data source is broken. This change points it to a working endpoint so the chart displays correctly again.
