Fix 'shell' call in makefiles for freebsd

It would seem that this form:

``` make
VERSION := $(shell git describe --always --dirty --tags)
```

Doesn't produce any return on FreeBSD. Maybe it's actually something else going on, but our Makefiles should be cross-platform in at least this regard.
